Here follows what Thomas Moffet had to say about the subject of Sugar

Of Sugar.

(Chap. XXVI. pp 250-251)

 Sugar or Suchar is but a sweet, or (as the Ancients term it) an Indian Salt. The best Sugar is made of the tears or liquor of Sugar canes, replenished so with juice that they crack againe. Other sorts are made of the Canes themselves finely cut, and boiled so long in water, till all their gumminess gather together at the bottome, as Salt doth in Cheshire at Nantwich. The best Sugar is hard, solid, light, exceeding white and sweet, glistring like snow, close and not spungy, melting (as salt doth) very speedily in any liquor. Such cometh from Madera in little loaves, of three or four pound weight apeece: from whence also we have a courser sort of Sugarloves, weighing seven, eight, nine or ten pounds apeece, not fully so good for candying fruits, but better for syrups and Kitchin uses.

Barbary and CanarySugar is next to that, containing twelve, sixteen and seventeen l. weight in a loafe. But your common and course Sugar (called commonly St. OmersSugar) is white without, and brown within, of a most gluish substance, altogether unfit for candying or preserving, but serving well enough for common syrups and seasoning of meat.
Of the pouder of which Sugar our cunning Refiners make such white and glorious Sugar in shew, that albeit it be neither sweet, light nor kindly, yet they feel an unspeakable sweetness by that art, or rather trade, or rather mystery, or rather (if I am not mistaken) flat couzenage and apparent knavery.
Concerning the uses of this worthy and sweet Salt; they are many and good. For whereas hony is hurtful to cholerick complexions, Sugar is incommodious or hurtful unto none; yea it is so mild and temperate, that Galen doth not disallow it to be given in agues. Furthermore it nourisheth very plentifully, yea it maketh many things to become exceeding good meat (by conditing, preserving and conserving) as Citrons, Limons, Orenges, Nutmegs, Ginger & such like, which of their own nature do rather hinder nourishment and procure leanness. Besides this, it delighteth the stomach, pleaseth the blood and liver, cleanseth the brest, restoreth the lungs (especially being candied) taketh away hoarseness, and asswageth drought in all agues, giving also no small ease to enflamed kidneys, and to bladders molested with sharpness of urine.
Sugar keepeth Children from engendring of worms, but being engendred, maketh them stir.

It were infinite to reherse the necessary use of it in making of good gellies, cullises, mortesses, white-broths, and restorative pies and mixtures: which sith cooks do and ought chiefly to practice, I will not further usurpe upon their province; onely say, Sugar never marred sawce.

Who is Doctor Moffett?

Almost twenty years ago Victor Houliston pondered the question of “How good were Little Miss Muffet’s Curds and Whey?” His paper on a possible association between the famous nursery rhyme about spiders, curds and whey, and a frightened little girl appears as part of the 1986 Oxford Symposium on Food and Cookery: The Cooking Medium. It is now online and archived at: http://tinyurl.com/prg469v Scholars still argue about the origins of the nursery rhyme but for our purposes the paper highlights in some parts the work of the famous miss’s father.

The “ever Famous” Thomas Moffett or Moffet or Muffett (1553-1604) was an English physician and naturalist who sometime in the 1590s wrote about the English diet and foods. (Dates vary as to when exactly but the years 1595-1597 are commonly mentioned.) Moffett’s work from these years would eventually be published as Healths improvement; or, Rules comprising and discovering the nature, method, and manner of preparing all sorts of food used in this nation. Moffett also studied silkworms and wrote a work on insects and bees.

 

Healths improvement appeared in print first in1655 or fifty plus years after the good doctor was dead and buried. The work’s title page credits reads “Written by that ever Famous Thomas Moffet, Doctor in PHYSICK.” Then the credits continue to include: “Corrected and Enlarged by Christopher Bennet,” another “Doctor of Physick.” Bennet’s own life was cut short by tuberculosis; he died at the age of 38 in the same year that Healths Improvement was published. The work was later republished in 1746 and that edition appears as part of Google Books.


Victor Houliston describes the work as “witty, gossipy, lively in style and argument entertaining and thoughtful.” For those researching the foods of Elizabethan and Jacobean England, the work deserves special mention as a relatively unused and unknown source for information and descriptions of ingredients.

Sugar Boiling


This is the first of several planned posts on the topic of sugar boiling. The science of boiling sugar until it reaches a certain stage is described in a number of early books and manuscripts. As one might suspect, the terms vary widely.

One of my favorite sources on modern sugar and sugar boiling remains:

Harold McGee's On Food and Cooking. [2nd ed. NY: Scribner, 2004.] See his chapter "Sugars, Chocolate, and Confectionery" beginning on page 645. McGee covers "The History of Sugars and Confectionery," ""The Nature of Sugars," "Sugars and Syrups,""Sugar Candies and Confectionery,"and "Chocolate." His chart on sugar boiling and candy stages appears on page 682.

Elise Fleming's Confections and the English Banquet. [The Compleat Anachronist, Issue #163; First Quarter 2014***).  Appendix F of this volume is titled "Sugar Stages and Temperatures." Sources include food historian Ivan Day, Larousse Gastronomique, Karen Hess, and The Joy of Cooking. The only drawback is that the material is crammed into just three and one third pages.

Avery valuable essay on sugars remains "Roses Sugar Bible." It was originally published in Food Arts Magazine in April 2000."  This award winning article by Rosie Beranbaum looks into modern sugars and their differences.

"TEMPERATURES AND TESTS FOR SUGAR SYRUP

215°F. Thread: The sugar may be pulled into brittle threads between the fingers. This is used for candy, fruit liqueur making, and some icings.

220 to 222°F. Pearl: The thread formed by pulling the liquid sugar may be stretched. When a cool metal spoon is dipped into the syrup and then raised, the syrup runs off in drops which merge to form a sheet. This is used for making jelly.

234 to 240°F. Soft ball: Syrup dropped into ice water may be formed into a ball which flattens on removal from the water. This is used for extra light Italian meringue, fondant, fudge, peppermint creams, and classic buttercream.

244 to 250°F. Firm ball: Syrup dropped into ice water may be formed into a firm ball which does not flatten on removal from the water. This is used for light Italian meringue, caramels, nougats, and soft toffees.

250 to 266°F. Hard ball: Syrup dropped into ice water may be formed into a hard ball which holds its shape on removal but is still plastic. This is used for toffee, divinity, marshmallows, and popcorn balls.

270 to 290°F. Soft crack: Syrup dropped into ice water separates into thread which are hard but not brittle. This is used for Italian meringue for piping elaborate designs, butterscotch and taffy.

300 to 310°F. Hard crack: Syrup dropped into ice water separates into hard, brittle threads. This is used for brittle and for glacĂ©ed fruits.

320°F. Clear liquid: The sugar liquefies (all moisture is removed) and can start browning. This is used for making barley sugar (a candy).

338°F. Brown liquid: The liquefied sugar turns brown. This is used for light caramel.

356°F. Medium brown liquid: The liquefied sugar darkens. This is used for praline, spun sugar, caramel cages, and nougatine.

374°F. Dark brown liquid: The liquefied sugar darkens further. This is used for intensely flavored caramel cream sauce and as a coloring agent for sauces.

410°F. Black Jack: The liquefied sugar turns black and then decomposes.

She continues with these handy hints:

Caramel

Different temperatures, ranging from 350°F. to 380°F. are suitable for different types of caramel. When making spun sugar, for example, too light a color would produce a ghostly effect and too dark a color would produce a brassy color when spun. When making a caramel sauce, however, 380°F. will offer a deeper more intense flavor. Over 380°F. and the caramel becomes unpleasantly bitter.

Recommended Temperatures for Caramel:

Pale amber 350°F to 360°F for a caramel cage. 
Medium amber 360°F. to 370°F. for spun sugar. 
Deep amber 370°F. to 380°F. for praline powder, caramels or caramel sauce. If using partially refined sugar, 360°F."
